How to Brew Loose Leaf Tea

After all these years of wanting one, I finally got a tea infuser! I researched the best way to make authentic green and white tea and have put together the following procedure to make the perfect brew. I have not yet made white tea using loose leaves, but I have made green and it was wonderful!

Here is my procedure (or recipe?):

1. Bring fresh water to a boil in the kettle.
2. Remove from heat, open spout and leave for 3 minutes.
3. Add tea to infuser (1 tsp for Green or 1 tbsp for White).
4. Place infuser into tea cup.
5. At this point, the water should be between 165 and 175 degrees Fahrenheit. Pour water over the tea and into the cup.
6. Cover and leave to steep (2 minutes for green or 5-8 minutes for white).
7. Remove infuser and set aside to use again (the same leaves can be used 3-5 times, just add 2 more minutes of steeping time for each additional brew).
8. Enjoy!
